Hand-Cut French Fries

Ingredients

  • 4 large floury potatoes (approx. 800g), such as Sebago or Russet
  • 15ml olive oil or vegetable oil
  • 5g sea salt
  • 2g cracked black pepper
  • 1g garlic powder (optional)

Instructions

Prep the potatoes: Peel the potatoes (or leave skin on for rustic style). Cut into even sticks, roughly 1cm thick.

Soak: Place the cut fries in a bowl of cold water for at least 30 minutes. This removes excess starch and ensures a crispier texture.

Dry: Drain and pat the fries thoroughly dry with a clean tea towel or paper towels. Moisture is the enemy of crispiness.

Season: In a dry bowl, toss the fries with the oil, salt, pepper, and garlic powder until evenly coated.

Air Fry: Preheat the air fryer to 200°C. Place the fries in the basket. Do not overfill; cook in batches if necessary for airflow.

Cook: Air fry for 18–22 minutes. Shake the basket vigorously every 5 minutes to ensure an even golden-brown color.

Finish: Remove once the fries are golden and crisp. Serve immediately while hot.
